A yummy lunch I recently made, idea courtesy of Real Simple - the salad included spinach, chopped avocado, chopped plum tomatoes, sauteed shrimp, and a homemade dressing.
I made the dressing by whisking together 2 tbsp lemon juice, 2 tbsp olive oil, 1/2 tsp honey, and a little salt and pepper.
